In vitro 柑橘类水果抵抗病原体的两种机制(预形成和诱导型抗真菌物质)进行了研究。方法与结果表明,柠檬的外层果皮组织含有以下预形成抗真菌物质:citral、limettin、5-Geranoxy-7-methoxycoumarin 与 isopimpinellin,它们构成了对抗病原体的第一道防线。外源性应用citral至接种Penicillium的柠檬果实可防止腐烂。当柑橘类水果受到真菌挑战和/或非生物胁迫时,会被诱导产生植物抗素scoparone,被认为是水果防御的另一线。根据抑制菌丝管伸长或孢子萌发的中位有效剂量(ED50),scoparone对Penicillium digitatum Sacc.的抗真菌毒性高于预形成抗真菌物质。不同柑橘类物种(柠檬、橙子、葡萄柚、青柠、金桔)在响应联合Penicillium接种和热处理或UV照射产生scoparone的能力上存在差异。UV照射柠檬果实降低了其对P. digitatum的易感性。结论:该效应的表达与受光照果实中scoparone的水平直接相关。高剂量的UV光和citral应用对外层果皮组织明显有害。
