Description Homoglutathione is a taste-modifying peptide responsible (in combination with γ-glutamyl peptides as γ-Glu-Leu and γ-Glu-Val ) for the “kokumi” flavor. Pesticides containing electrophilic centers can be metabolized in legumes via conjugation to homoglutathione or glutathione.
